These no-bake delicious chocolate covered nut-butter balls are so simple to make. I have never really used a recipe!
I made this last batch using pistachio nut-butter for about half of them and they were truly fabulous! You can use whatever nut or seed butter suits your fancy.
Blend almond flour in a bowl with your nut-butter of choice along with a touch of sweetener such as maple syrup if wanted. I find them to be delicious without sweetener. You can also add a teaspoon of vanilla extract and a touch of sea salt.
You will want to add enough nut-butter to make it easy to roll into a ball, then pop them onto a parchment lined tray.
Once the mixture is all rolled into balls, place them in the freezer for a few minutes while you melt your chocolate in a double boiler.
Once the balls are firm enough to hold their shape, roll them around in the chocolate, (which we have in stock again! It's a 70% dark chocolate that is soy lecithin free, and vegan!) and place on the parchment lined tray and pop in the freezer to let set for just a couple of minutes at most, then take them out and sprinkle a touch of flaked sea salt and maybe some sesame seeds on them and then put them back in the freezer until firm.
Once fully firm you can put them in a container and store them in the fridge or freezer to snack on. Enjoy.
