Almond Leek Soup

A warm soothing treat for winter days...


1 cup of prepared almonds (see below)
6 cups meat/vegetable broth
2 cups diced celery
1 chopped leek, white parts only
1 tbsp coconut oil
Salt and pepper, to taste


To prepare almonds, soak for 4-6 hours (overnight is fine), drain water, rinse and chop/grind in food processor.

Sauté leeks and celery in oil until soft. Simmer broth, almonds and sauteed vegetables for 10-15 minutes (until warm). Add s&p to taste and serve.
