I am generally not a fan of sweet breakfasts. I had bought a waffle maker for the teen for Christmas this last year, and so, I have been enjoying playing with savoury waffles. Victor and I like them, the teen less so. Though she is coming around. 

These come together quickly, and are as adaptable as can be! Substitute any veggie that you think would work here. 

Ingredients

2/3 cup almond flour

1/4 cup tapioca flour

1 1/2 tsp baking power

1/2 teaspoon salt

1/4 tsp garlic powder, can use a fresh clove or leave it out

1/4 cup milk of choice. I used oat

1/2 cup frozen corn, thawed for a few minutes by soaking it hot water

1/4 cup green onions

Small handful of chopped parsley

Method

Pre-heat waffle-maker
Mix everything together in a bowl
Ladle 1/2 cup mixture onto waffle maker and follow manufacturers directions 

You can serve it with a cashew cream, you can add a large handful of herbs to the cashew cream as well.

Cashew cream
Ingredients

3/4 cup raw cashews (soak for 15 minutes)
4 tbsp nutritional yeast
1-2 tbsp lemon juice (or 1 medium lemon)
1 clove garlic
2 tsp apple cider vinegar
1/2 tsp salt
3-4 tbsp plant milk (as needed for blending) 

Blend all of the above for a few minutes until creamy.
