One of the weekly joys that Victor and I have, is a Sunday walk after we go to a dance class. We head up Main Street in Vancouver to East is East, which is a favourite restaurant in the neighbourhood, and we pull out our to-go mugs and get a couple of soy-milk green-tea chais. And, quite often the super lovely woman that works there, Gayatri, will give us a couple of delicious pistachio cardamom cookie bites which we nibble on as we wander back down the street checking out the second hand shops and flower shops. It's without a doubt a favourite time of week for us. I love those little pistachio bites, and decided to try to come up with our own version. These aren't them, but even the 16 year old in our lives, who doesn't like nuts, said "these are pretty good, they taste like the ones we get at East is East!" So, that's a win. 

Ingredients

  • 1/2 cup or 50g almonds flour
  • 1/3 cup or 40g pistachios
  • 1/8 cup or 27g butter or butter substitute (I use Melt brand)
  • 1 TBSP chia seeds
  • 2 TBSP water
  • 1 tsp lemon juice
  • 1 1/2 tsp cardamom
  • 1/8 cup or 26g sugar

Directions

  1. Put the 1 TBSP chia, along with the 1 tsp lemon juice in 2 TBSP water in a bowl and soak for ten minutes before adding to the mixture below.
  2. Turn the oven on to 350°F
  3. Place the 1/2 cup almond flour and 1/3 cup pistachios into a food processor and pulse until the pistachios are in smaller chunks.
  4. Add the 1/8 cup butter, the chia mixture, the 1 1/2 tsp cardamom and 1/8 cup sugar to the processor and mix until it comes together in a loose ball.
  5. Form the mixture into balls about 2 tsps in size and place on a baking sheet lined with parchment paper. You should get about 15 small balls
  6. Place in the oven for 8 minute, remove from the oven, and with a spatula flatten into small discs IF YOU WANT or, simply leave in little ball shapes. Return to the oven for another 3 minutes.
  7. Remove from the oven and allow to cool fully.
  8. Makes approximately 15 small cookies. The recipe doubles easily.
  9. Store in an airtight container
