Lemon Cream Popsicles, vegan and gluten free
If you love lemony flavours, then these popsicles are for you!
The lemony flavour is strong and tart. If you prefer less lemon, well, there's obviously something wrong with you!. Just kidding. My partner finds them way too lemony for him, our teenager and most everyone else absolutely love them.
Makes 4 small popsicles
Ingredients
- 1/2 cup cashew pieces (soaked if they are hard, or if your blender is not very powerful. Ours are usually fine to use without soaking first)
- 1/2 cup coconut milk
- 1/4 cup honey or sweetener of choice to keep it vegan
- Zest of one lemon
- Juice of 2 lemons
- 1 teaspoon vanilla
Directions
- Put all ingredients into a blender, blend on high for a few minutes until the cashews have fully homogenized.
- Pour into popsicle molds and place in the freezer until fully set.
- These can be removed from their molds when set and placed in a container in the freezer.
- I make several different batches at a time. So I always have a few different flavours on hand for when guests come over.
