Ah, the bounty of summer: Blackberries from the front yard, raspberries from the neighbour’s patch, some pancakes and this yummy date caramel sauce to bring it all together. No added sugar - just the natural sweetness of the dates and the earthy depth of a little tahini makes a fluffy, thick, natural caramel topping. Great on top of breads, or to accompany fruit. It all comes together in 15 minutes and can store in the fridge for a few weeks. 

Ingredients 

  • 1 cup pitted dates (160 g)
  • 1/4 cup tahini (60 g)
  • 1/2 teaspoon cinnamon 
  • 1/4 tsp vanilla extract
  • 3/4 to 1 1/4 cup water (depending on thickness)

Method

  1. Add the soft dates, tahini, cinnamon, and vanilla powder to a food processor or high-powered blender.
  2. Pour in 1/2 cup of warm water.
  3. Blend until smooth, adding more warm water a little at a time until you reach a thick, but pourable consistency.
  4. Continue blending for 2-3 minutes until the mixture is smooth and creamy.
