Crunchy, sweet, nut and seed snacks

These crunchy, lightly sweet and salty snacks are so simple to make and the perfect after lunch, or afternoon pick-me-up that we all crave.
They are adapted from "Nadia's Healthy Kitchen", and of course, I followed/didn't follow the recipe. I used the same quantities, but then completely different ingredients. Because, that's what you do when you open your fridge and see what's in there.
Ingredients
- 55g chopped almonds
- 40g sunflower seeds
- 40g chopped cashews
- 75g pistachios
- 2 tbsp chia seeds
- Pinch of salt, plus some flaked salt to sprinkle on top (optional)
- 2.5 tbsp maple syrup
NOTE: you can substitute ANY nuts or seeds for this recipe. Sesame seeds would be delicious, or pumpkin, walnuts maybe. You can also add some spice to it by adding 1/4 tsp of cayenne pepper to it.
Directions
- Preheat your oven to 350F.
- Mix the nuts, seeds and salt in a bowl, then mix in the maple syrup.
- Line a baking sheet with parchment paper. Place some of the mixture in a round cookie cutter to shape into flat discs, flatten the tops before removing the cookie cutter. Or alternatively you can spoon some of the mixture straight onto the lined baking sheet to make clusters instead.
- Bake for 15 minutes, or until golden brown. Allow to cool completely to firm up (they may break apart if you attempt to move them whilst still warm).
- Makes about 9 discs.
