Oatmeal Cacao & Macadamia Nut Cookies

Looking for a more nutritious cookie that freezes well so you aren't eating the whole batch at once? Try these oat, cacao, macadamia nut treats!

Ingredients

1 1/3 cups of rolled oats
1/2 cup of almond butter
1/4 cup of macadamia nuts
1 egg
1/8 cup of butter
1/2 tsp baking soda
1/4 cup each of sugar & brown sugar
3/4 cup of cacao nibs
1/2 tsp vanilla

*Please use organic & sprouted nuts/seeds when possible for greater nutrient density and improved digestion (and a happier planet!).

Method

Preheat oven to 350F. In a large bowl, combine sugar, brown sugar & butter and mix until creamy. Add egg, vanilla and baking soda and mix. Add almond butter and mix well. Then add the rolled oats, cacao nibs and macadamia nuts - mix thoroughly until well combined. Spoon about a tablespoon full of dough onto a cookie sheet about 2 inches apart. Bake for 11-13 minutes or until lightly brown around the edges. Enjoy!
