Looking for a more nutritious cookie that freezes well so you aren't eating the whole batch at once? Try these oat, cacao, macadamia nut treats!



1 1/3 cups of rolled oats
1/2 cup of almond butter
1/4 cup of macadamia nuts
1 egg
1/8 cup of butter
1/2 tsp baking soda
1/4 cup each of sugar and brown sugar
3/4 cup of cacao nibs
1/2 tsp vanilla


Preheat oven to 350F. In a large bowl, combine sugar, brown sugar and butter and mix until creamy. Add egg, vanilla and baking soda and mix. Add almond butter and mix well. Then add the rolled oats, cacao nibs and macadamia nuts - mix thoroughly until well combined. Spoon about a tablespoon full of dough onto a cookie sheet about 2 inches apart. Bake for 11-13 minutes or until lightly brown around the edges.
