2 cups strawberries or your favourite berries
1 cup of cashews
1/2 tbsp vanilla
3 tbsp of honey
Soak the cashews in 2 cups of water and set aside for 2 hours. After 2 hours, discard water, add two fresh cups of water and blend with vanilla and 1 tbsp of honey until smooth. Set aside.
Puree the strawberries and 2 tbsp honey in a blender/food processor until combined. Set aside.
In your favourite popsicle mold alternate between adding the berry mixture and the cashew mixture until the mold is filled. Place them in the freezer until frozen.
