Cashew Cream - Dairy Alternative

Coffee cream is one of the most difficult to replace when you aren't eating dairy anymore. Cashews offer a really creamy texture


1 cup of cashews
2 cups of filtered water (less for thicker)
Extras: 1 tbsp vanilla, 2-4 dates, cinnamon, nutmeg

Please use organic when possible for greater nutrient density (and a happier planet!).


Soak your cashews in water for 2-10 hrs. Remove water, rinse and add the cashews, 2 cups of fresh filtered water and any flavouring you'd like. Blend until smooth (vitamix always works best). Cashews won't leave pulp like some of the other nuts so you can drink right away as is. Generally keeps well in fridge for 2-3 days.
