Light and nutrient dense, this is a really lovely salad.


2 beets with greens
3 tbsp of crumbled goat cheese
2 tbsp of olive oil
6 brazil nuts, chopped
salt and pepper to taste


Remove greens from beets and wash each. Lightly steam greens and set aside to cool. Slide beets thinly (1/4 inch) and steam and let cool as well as well. When steaming veggies, only steam until el dente.

Place the greenery on the bottom of your dish, then place beets over top and cover with the olive oil, salt and pepper. Top with cheese and nuts.
