Light and nutrient dense, this a really lovely salad.Ingredients
2 beets with greens
3 tbsp of crumbled goat cheese
2 tbsp of olive oil
6 brazil nuts, chopped
salt & pepper to taste
*Please use organic & sprouted nuts/seeds when possible for greater nutrient density and improved digestion (and a happier planet!).
Remove greens from beets and wash each. Lightly steam greens and set aside to cool. Slide beets thinly (1/4 inch) and steam and let cool as well as well. When steaming veggies, only steam until el dente...no need to over cook as the longer they are under heat, the more nutrients will be lost.
Place the greenery on the bottom of your dish, then place beets over top and cover with the olive oil, salt & pepper. Top with cheese and nuts. Yum!
