These certified organic macadamia nuts are grown on a family farm in Kona, Hawaii.
Because macadamia nuts fall to the ground they are more prone to contact with bacteria (this is why most macadamia nuts are roasted, in order to kill pathogens). Macadamia nuts must go through a low heat stage to ensure that these pathogens are destroyed. We use a farm that dehydrates their nuts at low temperatures, high enough to kill pathogens, but low enough to still maintain nutrients. Our farmers dehydrated the macadamia nuts at a temperature of 145º F for one hour right after harvest.
