A tangy light dressing that's great for salads or to dip veggies in.Ingredients
1/4 cup of almonds*
1/4 cup of water
1/8 cup of lemon juice
1/8 cup of olive oil
1 clove of garlic
salt & pepper to taste
*Please use organic & sprouted nuts/seeds when possible for greater nutrient density and improved digestion (and a happier planet!).
In a food processor, add almonds and blend. The almonds will first take a few minutest to turn granular and then after 5+ minutes the oils should release and over time, it will turn into almonds butter. Stop the food processor about once per minute to scrape down the sides and stir the almond mixture.
When the almonds look like almond butter, add in the remaining ingredients and blend until mixed. The salad dressing is ready to eat! Store in fridge and it should stay fresh for about a week.
