A tangy light dressing that's great for salads or as a dip.

Ingredients

1/4 cup of almonds
1/4 cup of water
1/8 cup of lemon juice
1/8 cup of olive oil
1 clove of garlic
salt and pepper to taste


Method

In a food processor, add almonds and blend. The almonds will first take a few minutest to turn granular and then after 5+ minutes the oils should release and over time, it will turn into almonds butter. When the almonds look like almond butter, add in the remaining ingredients and blend until mixed. Store in fridge where it should stay fresh for about a week.
