Raw Almond and Pumpkin Seed Dip

I enjoy using this dip with crackers, as a spread on sandwiches or wraps, as a veggie dip or with your favourite loaf of bread.

Ingredients

1 cup of raw almonds
1/2 cup of raw pumpkin seeds
1/2 cup of raw sesame seeds
1 cup of carrots, chopped
1/2 cup of zucchini, chopped
1/2 an avocado
2 garlic gloves, minced
1/4 cup each of parsley & cilantro
Juice from 1/2 of a lemon
Salt & pepper to taste

Method

Soak the almonds, pumpkin seeds and sesame seeds in water for 4-6 hours (overnight is fine if it's easier). Drain and rinse thoroughly. Put all ingredients into a food processor and mix thoroughly (8-10 minutes) - add water as needed (it should be thick but spreadable). The longer it mixes, the creamier the nuts and seeds will make it.
