Thanksgiving is fast approaching and if you aren't sure how to make a delicious stuffing, try this unique twist to your old favorites.

Ingredients

8 slices of wholegrain bread
1 cup of chopped walnuts
40 g of butter
1 large onion, minced
2 celery sticks, minced
1/4 cup of dried goji berries
1 egg 
1 tbsp thyme (fresh or dried)
2 tbsp of sage (fresh or dried)
1 tbsp of rosemary (fresh or dried)
salt and pepper to taste

Method

Let the bread sit over night so that it gets a bit hard. In a pinch, put it in the oven to dry out before using in the recipe. Chop bread into little squares (about 1/2 x 1/2 inch).

Add 1/2 cup of water to the goji berries and let sit for 10 minutes allowing them to suck up the moisture. Drain if water remains. 

Melt butter on medium heat in saucepan and add onions & celery.  Stir until soft, about 5 minutes. Set aside to cool. Remove water from goji and put all ingredients into a bowl (bread, walnuts, onion, goji, egg and spices). Mix well and use to stuff your turkey or chicken. Yum!

- use cranberries instead of goji
- use pecans instead of walnuts
